Found this on the Internet and gave it a try.
Use 1 cup evaporated milk, take out 2 Tablespoons then add 2 Tablespoons lemon juice and let set for 5 to 10 minutes.
When using this sour cream in a recipe, would be fine when it is not the main ingredient, you can also use plain yogurt in equal amount to what the sour cream would have been.
